125 Best Vegetarian Slow Cooker Recipes
Review By M. McTigue
This is the best vegetarian slow cooker cookbook that I've found, though there really aren't many others. I own two vegetarian slow cooker cookbooks and this is the only one I use. In the year that I've owned this book I've made close to 30 of the recipes. The photos in the book are enticing and the recipes are easy to follow and for the most part have been flavorful and popular with my family. I especially like the spicy recipes like Caribbean Pepper Pot Soup and Red Lentil and Carrot Soup with Coconut. There have been a few duds- Cannelloni with Tomato Eggplant Sauce didn't turn out well from my slow cooker. I have come to really embrace the technique of precooking the vegetables as suggested by Finlayson since this lends much better flavor and texture to the finished dishes. I am back today to purchase a copy for my sister, also a vegetarian and soon to be a regular slow cooker.
Fresh from the Vegetarian Slow Cooker: 200 Recipes for Healthy and Hearty One-Pot Meals That Are Ready When You Are
Vegetarian cooking instructor Robertson (Vegan Planet) turns her attention to the growing number of slow cooker owners. Starting with Slow Cooker Basics, she takes the user through the ins and outs of the appliance from the size of machine suitable for good results to cooking times and 10 quick tips for cooking success. She also devotes a small section to those vegetarian ingredients, such as seitan, that
nonvegetarians may not be familiar with. Branching out from the traditional casseroles and stews so popular in the early days of the slow cooker, she tackles appetizers, soups and desserts as well, using the appliance with great effect to produce vegetable stocks as well as flavorful offerings like the Indian-inspired Curried Cauliflower Soup with Chutney and Cashews as well as Asian-influenced Hot and Sour Soup. The fundamental chilis and stews are not forgotten, but beans and grains so essential to the vegetarian diet put the slow cooker to best use. Pastas and vegetables nicely round out the book.

Real Food for Mother and Baby: The Fertility Diet, Eating for Two, and Baby's First Foods
Review
"Far from deprivation, the nutritional plans here for fertility, pregnancy, nursing and young kids propose a wide variety of whole grains, seasonal vegetables and fruits, and raw milk and organic animal fats necessary for healthy pregnancies and fetal and childhood development instead of skim milk, “carbage”(junk carbohydrates) and trans-fats... It tastes better and it’s good for you. Plank gives more comprehensive pre-pregnancy and pregnancy diets than those in What to Expect, and her lively, genuine and personal approach makes it easy to absorb a lot essential information." - Publishers Weekly
Following the success of Real Food, Nina Planck’s Real Food for Mother and Baby explains why real food is better for woman and child.
Nina Planck, one of the great food activists, changed the way we view old-fashioned foods like butter with her groundbreaking Real Food. T hen she got pregnant. Never one to accept conventional wisdom blindly, Nina found the usual advice about pregnancy and baby food riddled with myths and misunderstandings. In Real Food for Mother and Baby, Nina explains why many modern ideas about pregnancy and infant nutrition are wrongheaded and why traditional foods are best. While Nina can be controversial—her op-ed in the New York Times on vegan diets for infants was one of the paper’s most e-mailed articles— she’s no contrarian. Readers applaud her candor; they also trust her research and welcome her advice.
Nina’s basic premise hasn’t changed—whole foods are best—but some of the details are surprising. Pregnant women need meat and salt, not iron supplements. Nursing will be easier if you act like the mammal you are. Delaying the introduction of certain solid foods doesn’t prevent allergies. Cereals are not the best foods for tiny eaters; meat and egg yolks are better. From conception to two years, the body’s overwhelming needs are for quality fat and protein, not for carrots and low-fat dairy. Even as she casts a skeptical eye on the conventional wisdom, Nina is reassuring. She shows you how to keep your baby healthy on good, simple food. Real Food for Mother and Baby will be the new classic on eating for two.

Review By E. Anderson
I have been a huge fan of COOKING LIGHT magazine for the past few years. I started reading it when I would visit my folks over the holidays. I borrowed a copy of one of my mom's CL issues and loved the results I got when I tried the Korean Bolgoi (grilled strips of beef in a sweet, salty marinade). I was immediately hooked on the magazine. I eventually started receiving a subscription to COOKING LIGHT. I have been a subscriber to both BON APPETIT and GOURMET magazines, let me just say that I think COOKING LIGHT is vastly superior to those magazines (although I do like reading them) because the recipes are not so high end (i.e expensive) and involves expensive, hard to find ingredients. I also enjoy the health tips and articles the magazine provides. I have tried a lot of recipes from COOKING LIGHT and they are all delicious as well as healthy. This magazine is not just about eating healthy but staying healthy too.

Second, it converts inorganic elements and molecules to be 100% organically microcomplexedTM for maximum intra-cellular and extra-cellular detoxification. Lastly it helps with detoxification by surrounding, then polymerizes an inorganic molecule (toxin) with living organic carbon, then instantly breaks it into very tiny restructured organically complexed molecules which can be eliminated out of the body.

This means that all the nutrients have been bound to organic carbon, the very substance that comprises most of the earth's matter. Therefore, Pana C-315® is very homogeneous to the human body. Its liquid form is extremely well tolerated and efficiently absorbed. It is efficacious and safe for all members of your family. Pana C-315® is all natural, vegetarian, drug free, caffeine free and preservative free. What type of multivitamin is best for my family? Carbon-Bond Organic Supplements.Modern research supports the assertion that every individual needs a good daily multivitamin as a foundation of health and nutrition. What kind to take is a very important question. There are many types of multivitamins on the market, and there are equally varied messages about what is good. Here are a few considerations that are truly important: Look for a good quality supplement without binders, synthetics and excipients. These are the agents that are used to manufacture many pills. These agents can be harmful to the body. Avoid synthetic vitamins, often Vitamin A (retinol), Vitamin C (ascorbic acid), and Vitamin E (dl-alpha-tocopherol). These are less bio-available (takes more to gain effective dose) and may even be harmful. Organic vitamins are higher quality than non-organic.

Acai juice is a super-antioxident, much higher than blueberries even. This Acai 100 contains the entire berry: not only the juice, but the skin and seeds, too: most healthy. Quite sour, so it's best blended/mixed with a sweeter juice or a banana. While this review is only anecdotal, we feel sure the twice-daily dose is keeping a family member's chronic leukemia at bay. If not, it's still a very healthy addition to our diet.

The Instinct Diet: Use Your Five Food Instincts to Lose Weight and Keep it
Satisfying our hardwired instincts has been critical to our survival for as long as we have been human. That's why we eat when food is available, choose the most calorie-dense foods, and hate the feeling of hunger. Today, these same drives are leading millions down the path of obesity. But Dr. Susan B. Roberts, an internationally recognized nutrition researcher at Tufts University, shows how to turn our food instincts into an engine for permanent, healthy weight loss.
The Instinct Diet—the "I" diet—is a pleasure to follow: a diet based on impeccable research, a diet where the dieter never goes hungry, a diet that's unequivocally healthy, thoroughly grounded in the metabolic, genetic, and psychological workings of the human body. Essentially, it shows how you can control the controls. Through its focus on delicious, deeply satisfying dishes like Orange Crumbed French Toast, Pork and Lemongrass Soup, Watercress and Citrus Salad with Parmesan Toast, and Chocolate Bread Pudding, plus proven behavioral modifications (Dr. Roberts is a professor of nutrition and professor of psychiatry), the diet is a fat-burning marvel. At Tufts, 85 percent of participants in Dr. Roberts' research program lost 10 to 50 pounds in the first six months, and 90 percent of them kept the weight off for at least a year. The Instinct Diet shares everything learned by Dr. Roberts over 17 years and more: better ways to lose weight whatever you eat; also a three-stage diet plan; over 100 recipes; eight weeks of menus (with vegetarian and "non-cook" options throughout); and dozens of ideas and strategies for how to retrain our bodies—how to combat the "Gulping Syndrome," use the "Sandwich Technique," why tapping your forehead is an emergency measure to reduce food cravings, and more.
The Superfoods Rx Diet: Lose Weight with the Power of SuperNutrients
Blockbuster bestseller SuperFoodsRx identified a variety of SuperFoods that prevent disease and significantly improve health. In this follow-up diet plan—fully tested in two intensive 30-day trials involving more than 100 volunteers—the authors show how a diet rich in these powerhouse nutrients also helps one to lose weight. The Los Angeles Times listed the hardcover edition in its list of notable weight-loss books. And all across the nation the verdict from satisfied, successful dieters is coming in fast—this is a weight-loss program that health-conscious dieters want to make their lifetime eating plan.

Probiotic Foods for Good Health: Yogurt, Sauerkraut, and Other Beneficial Fermented Foods
Probiotic Foods for Good Health: Yogurt, Sauerkraut, and Other Beneficial Fermented Foods
Probiotics (“for life”) are fermented foods cultured by beneficial microorganisms. Probiotic foods such as yogurt and sauerkraut are the most familiar. There are many more, enjoyed for centuries in different parts of the world, but largely unknown in the United States. I is time to become acquainted with them and to use them for their benefits.
Fermented foods have values beyond their original states. Fermentation increases some nutrients, gives foods a tasty zing, and keeps them well without preservatives. Fermented foods support the immune system. The beneficial bacteria in fermented foods help keep the digestive tract healthy and protect against virulent pathogens that cause foodborne illnesses. The typical American diet makes the body vulnerable to these infections. The problem is compounded by our over-reliance on antibiotics and our increasing resistance to them. Unfortunately, antibiotics kill the beneficial microorganisms along with the pathogens. Probiotic foods can prevent or alleviate many health disorders—ranging from allergy and asthma to yeast infection and heart disease—that result from foodborne infections and antibiotic resistance.
In Probiotic Foods for Good Health, you will learn about the special nutritional and therapeutic features of traditional probiotic foods. You will learn about the special contributions of yogurt and other fermented milk products. Yo will become an enlightened consumer, able t choose wisely among these food products that, through commercialization, have undergone extreme modifications. You will learn about fermented foods based on vegetables, beans, and cereal grains. Yes, there are vegetables other than cabbage that can be fermented! Although probiotic supplements may be useful, this book focuses mainly on probiotic foods
Probiotic Foods for Good Health discusses in detail more than forty types of fermented foods. It provides you with practical information about reliable sources for fermented foods, at-home starter cultures, and shopping tips. Fermented foods are nutritious, add variety, and can fit easily into your daily diet. Above all, they are health promoting.
Food Policy: Integrating health, environment and society
For over half a century, food policy has mapped a path for progress based upon a belief that the right mix of investment, scientific input, and human skills could unleash a surge in productive capacity which would resolve humanity's food-related health and welfare problems. It assumed that more food would yield greater health and happiness by driving down prices, increasing availability, and feeding more mouths. In the 21st century, this policy mix is quietly becoming unstuck. In a world marred by obesity alongside malnutrition, climate change alongside fuel and energy crises, water stress alongside more mouths to feed, and social inequalities alongside unprecedented accumulation of wealth, the old rubric of food policy needs re-evaluation. This book explores the enormity of what the new policy mix must address, taking the approach that food policy must be inextricably linked with public with public health, environmental damage, and social inequalities to be effective.
Written by three authors with differing backgrounds, one in political science, another in environmental health and health promotion, and the third in social psychology, this book reflects the myriad of perspectives essential to a comprehensive view of modern food policy. It attempts to make sense of what is meant by food policy; explores whether the term has any currency in current policy discourse, assesses whether current policies help or hinder what happens; judges whether consensus can triumph in the face of competing bids for understanding; looks at all levels of governance, across the range of actors in the food system, from companies and the state to civil society and science; considers what direction food policies are taking, not jsut in the UK, but internationally; assesse who (and what) gains or loses in the making of these food policies; and identifies a modern framework for judging how good or limited processes of policy making are.
This book provides a major comprehensive review of current and past food policy, thinking and proposing the need for what the authors call an ecological public health approach to food policy. Nothing less will be fit for the 21st century.

Great food for inflammation sufferers.
Cut your finger accidentally and the area will swell, redden, and heat up. This type of acute inflammatory response is the body's reaction to trauma, and it's an essential part of the healing process. But inflammation can be harmful when it hangs around too long and refuses to leave. When the inflammation switch refuses to turn off, the body operates as if it is always under attack (the older we get, the more likely this is to happen). White blood cells flood the system for weeks, months, and even years.
Researchers are now linking low-grade, persistent inflammation to premature aging, heart disease, M.S., diabetes, Alzheimer's, psoriasis, arthritis, and cancer.
While anti-inflammatory drugs do exist, they can injure the stomach or suppress the immune system. Fortunately, the situation can be remedied by a change in diet, specifically by altering the kinds of fats you eat. Omega-3 fatty acids tend to decrease inflammation while omega-6 fats and trans-fats increase inflammation. While many foods in the standard American diet (unrefined white flour, sugar, red meat, diary, fast food, and food additives) exacerbate inflammation, a healthy diet made up of fish, nuts, seeds, oils, lean grass-fed meats, and fruits and vegetables can help lessen or prevent inflammation. Likewise, certain spices such as turmeric, cloves, and ginger have proven anti-inflammatory activity.
Anti-Inflammatory Foods for Health will help those with inflammation incorporate anti-inflammatory foods into their everyday diet. Sample recipes may include French-Canadian Pea Soup, Sumac Salmon, Maple-Ginger Butternut Squash, Lime-Ginger Glazed Chicken with Fennel Relish, Green Salad with Grapes and Sunflower Seeds, Cod with Saffron Sauce, and more.

Raw Food And Health: The Raw Food Classic By The Founder Of The Raw Food Movement
"Longevity should be the rule and not the exception." Dr. Estes is the father of Raw Foods, Disease Prevention and Life Extension. His massive work belongs in the home of EVERY raw foodist, EVERY health-conscious person, and everyone looking for the anti-aging formula. One of his favorite slogans is 'How to live 150 years' and he illustrates exactly how. He described himself as the cripple who rebuild himself, and practiced what he preached. He and his wife, (who collaborated with him on this great work) had 8 raw children. But beware- this book does not pull any punches, it lays health on the line and makes no apology for being straight forward and 'telling it like it is'. If you could have only ONE book for your RAW library, this is it.

Chakra Foods for Optimum Health: A Guide to the Foods That Can Improve Your Energy, Inspire Creative Changes, Open Your Heart, and Heal Body, Mind, and Spirit
Review
"Chakra Foods for Optimum Health" is a "roll up your sleeve" self help book. Describing in detail, techniques that Dr Minich has used successfully to assist her patients in rebalancing their chakra centers, overcome obstacles to health, regain energy, creativity, and find new meaning in their lives. Her Chakra questionnaire is a tremendous asset assisting you in pinpointing areas of dysfunction and imbalance. She expertly takes you through each of the seven chakra centers discussing in detail food and eating healing plans, simple affirmations that make a big difference, imaginative activities you can easily do to help rebalance your chakras, and a specific eating plan to support energy flow through each chakra. At the end of the book are countless tasty recipes to help you enjoy healthy variations of familiar foods and explore new flavors and sensations. - Jacob Kornberg, MD, FACS
"Chakra Foods is loaded with wisdom, joy, and practicality. Reading through this book provided me with many 'ah ha!' experiences. Chakra Foods is full of unusual and uplifting insights that one can apply to their life instantly." -Christiane Northrup, MD, author of The Secret Pleasures of Menopause and Women's Bodies, Women's Wisdom
Nutritionist and yoga practitioner Deanna Minich's Chakra Foods provides information on how to heal emotional and physical woes through making the right food choices. The material for this book developed out of the author’s highly successful "Nutrition for the Soul" classes, workshops, and private counseling sessions. Not a diet book, it looks at both the nutritional and spiritual aspects of the foods we eat and how they can heal us. For example, someone feeling stuck in their lives could turn to chapter 5 and find a list of orange foods -- apricots, carrots, salmon, pumpkin, oranges -- to help their sacral chakra. For each chakra, specific affirmations and other practices are also offered, as are meal plans and recipes. Helpful lists, charts, and diagrams help readers easily pinpoint and diagnose themselves and the various prescriptive options are all very clearly explained. With lots of useful sidebars, this book really is a treasure trove of energy medicine in the form of food -- truly food for the body, mind, and soul!

Food Politics: How the Food Industry Influences Nutrition, and Health, Revised and Expanded Edition (California Studies in Food and Culture)
absorbingly details how the food industry--through lobbying, advertising, and the co-opting of experts--influences our dietary choices to our detriment. Central to her argument is the American "paradox of plenty," the recognition that our food abundance (we've enough calories to meet every citizen's needs twice over) leads profit-fixated food producers to do everything possible to broaden their market portion, thus swaying us to eat more when we should do the opposite. The result is compromised health: epidemic obesity to start, and increased vulnerability to heart and lung disease, cancer, and stroke--reversible if the constantly suppressed "eat less, move more" message that most nutritionists shout could be heard.
Nestle, nutrition chair at New York University and editor of the 1988 Surgeon General Report, has served her time in the dietary trenches and is ideally suited to revealing how government nutritional advice is watered down when a message might threaten industry sales. (Her report on byzantine nutritional food-pyramid rewordings to avoid "eat less" recommendations is both predictable and astonishing.) She has other "war stories," too, that involve marketing to children in school (in the form of soft-drink "pouring rights" agreements, hallway advertising, and fast-food coupon giveaways), and diet-supplement dramas in which manufacturers and the government enter regulation frays, with the industry championing "free choice" even as that position counters consumer protection. Is there hope? "If we want to encourage people to eat better diets," says Nestle, "we need to target societal means to counter food industry lobbying and marketing practices as well as the education of individuals." It's a telling conclusion in an engrossing and masterfully panoramic exposé. --Arthur Boehm

Living Foods for Optimum Health : Staying Healthy in an Unhealthy World
Living Foods for Optimum Health : Staying Healthy in an Unhealthy World
This book advocates a diet primarily of "fresh, organic, uncooked, unrefined foods that provide the body with everything it needs to stay strong, healthy, and vigorous." Switching to this diet of "living" foods can be a big step for the millions of fast-food addicts out there, but the long-term health benefits--cancer prevention, weight loss, increased longevity and energy--are more desirable than a measly paper bag of salty fries.
Written in conjunction with the Hippocrates Health Institute in Florida, which has been known to help cancer patients into remission through diet, this book takes a slightly scare-tactic approach, citing a few too many frightening health statistics ("1 in 3 Americans alive today will develop cancer"). However, its intentions are spot-on. To make the transition to the Institute's recommended diet (75 percent raw fruits and vegetables and 25 percent cooked foods--mainly grains and soups), it gives more than 100 recipes and a week's worth of sample menus, and even instructions on how to sprout your own seeds and nuts. For anyone truly dedicated to going beyond vegetarian to living the whole-foods way, this book is a solid, encouraging guide.

EatingWell's Comfort Foods Made Healthy: The Classic Makeovers Cookbook
Hundreds of easy recipes, cooking and shopping tips, and nutrition advice to make your classic favorites healthier.
For 18 years, EatingWell Magazine has been known for taking classic favorites and making them healthier, using simple steps, handy ingredients and strict nutrition guidelines. Now, hundreds of healthy, easy recipes as well as cooking and shopping tips and nutrition advice are compiled in this exciting new cookbook.
In this book, EatingWell delivers hundreds of recipes for every occasion—from Super Bowl snacks to Mother's Day brunches to Thanksgiving dinners—and for every type of food (yes, even chocolate desserts!).
For each of our makeovers, we provide nutritional analysis and tell you how we improved it compared with a classic version. For instance, our chicken-fried steak with gravy has nearly half the fat and one-third the calories of the classic version yet still tastes as rich and satisfying as the original. By putting a little canned pumpkin into a tomato sauce, using whole-wheat dough and turkey pepperoni, EatingWell improves classic pepperoni pizza, cutting the calories, sodium and fat by one-third or more.
EatingWell Comfort Foods Made Healthy also offers real-life stories of people whose meals have inspired "makeovers," ranging from legendary football player Anthony Davis to Jake Burton Carpenter, the founder of Burton Snowboards, to organic-foods pioneer Nell Newman. We also solve problems for everyday families including: a Chinese dinner a diabetic can appreciate and healthier crispy tacos for a family from Texas.
With a fun tone, easy-to-follow instructions and quick and simple recipes, EatingWell Comfort Foods Made Healthy is accessible to anyone. It is aimed at both the first-time cook as well as people who grew up cooking and now want to make their classic favorites healthier.
This book does far more than just provide the recipes, though, it will also teach you the secrets of healthy, balanced cooking. The introduction covers the principles of healthy cooking, from picking the most nutritious ingredients to meal planning, with sections that cover:
• Healthier techniques for frying and baking
• How to get more vegetables into your meals
• A "pantry-raid": a list of healthy staples you should swap into your pantry and keep as staples
• Tools to use: a list of essential tools that a healthy kitchen should stock
• Tips on picking the healthiest fats and oils
Whole Grains Every Day, Every Way
Review
“Lorna Sass has created a thoughtful and comprehensive guide from amaranth to triticale that manages to be provocative as well as pleasing; we should all think as carefully about whole grains as she has, and we should try to have at least half as much fun doing it. This book is a great place to start.”
—Dan Barber, chef-owner, Blue Hill and Blue Hill at Stone Barns
“Lorna Sass’s new book makes whole grains look absolutely mouthwatering! Putting grains in the company of other good foods, where they should have been all along, gives these recipes such style and panache that they are hard to resist. No longer do grains have to be exiled to some dull place of earnest health. Good for Lorna for giving them the star billing they deserve.”
—Deborah Madison, author of Local Flavors:Cooking and Eating from America’s Farmers’ Markets
“This is an exciting new book for all of us who love good food and want to cook food that’s good for us. Lorna Sass has been our trusted guide to the world of healthful eating for years; now she gives us an indispensable primer, simple techniques, and great recipes for the grains we’ve always loved and the ones we’ve always wanted to learn more about. At last I know what to do with kamut–teff, sorghum, and amaranth, too–and so will you.”
—Dorie Greenspan, author of Baking: From My Home to Yours
“This book is a must for anyone trying to make sense of whole-grain recommendations and labels. It should immediately become an essential tool for cooks, timid or adventurous, who want to make delicious meals from basic wheat and rice or the more exotic teff and Job’s tears.”
—Marion Nestle, professor of nutrition, food studies, and public health, New York University, and author of What to Eat
“The title says it all: Lorna Sass has created an irresistible and wide-ranging collection of recipes that make both familiar and exotic grains easily accessible for everyday meals. I highly recommend this superb and useful cookbook.”
—Paula Wolfert, author of The Slow Mediterranean Kitchen: Recipes for the Passionate Cook
“A first-class, accessible resource for building truly delicious whole-grain dishes into your daily meals.”
—K. Dun Gifford, president, Oldways, and founding member, Whole Grains Council
In this incredibly thorough, A-to-wheat berries guide to whole grains, Sass (Cooking Under Pressure) begins with a thoughtful and extensive primer on whole grains, including detailed profiles and basic cooking instructions for each. She covers no fewer than 20 kinds of rice (Bhutanese red, black Japonica) and just as many types of wheat before launching into recipes for soups and salads, main courses, side dishes, breakfast foods and desserts. The dishes are surprisingly tempting and varied, and the entries are more sophisticated than one might expect in a whole grain book. Thai Chicken Soup with Chinese Black Rice; Quinoa and Calamari Salad; Corn Polenta with Sausage and Peppers; Popcorn-Crusted Catfish; and Wild Rice Medley with Braised Chicken in Balsamic-Fig Sauce. And the sweets and desserts, like Chocolate Chip-Hazelnut Cookies, Popcorn-Almond-Caramel Balls, and Tarragon-Scented Rustic Nectarine Tart, prove that incorporating whole grains into the diet can be downright decadent. Toddler Café: Fast, Healthy, and Fun Ways to Feed Even the Pickiest Eater
Every toddler goes through the stage where they want nothing but "O"-shaped cereal. The challenge for parents is getting kids to ask for fruit salad instead of cupcakes. Faced with this seemingly impossible task with her own child, Jennifer
Carden has created The Toddler Caf , a guide to making mealtime with children fun and interactive. It offers simple, creative ways for kids to identify with their food, like saying tuna salad is what mermaids eat, or making Minty Pea Pops in ice cube trays. Carden has created over 50 unique recipes that encourage families (including toddlers) to work together to prepare, eat, clean up, and best of all, look forward to a healthy, delicious meal.
The Family Style Soul Food Diabetes Cookbook
The New Soul Food Cookbook for People with Diabetes, the first diabetes cookbook for and by African Americans, was a blockbuster. Now Gaines and Weaver are back with new friends and 150 more low-fat soul food recipes for the whole family. All the Cajun, Creole, and down-home favorites are here—and now in healthier versions, including Barbecue Grilled Catfish, Sister Mabel’s Macaroni and Cheese, Fried Green Tomatoes, and much more!
Healthy Soul Food Cooking
Aimed at those who need to clean up their diet but don't want to give up favorites like bananas foster, this cookbook from dieticians Gaines and Weaver offers healthier versions of soul food standards. It's a lofty goal: soul food derives much of its appeal from fats like butter, lard, bacon and cream. Many recipes simply substitute low- and non-fat ingredients, as in Bananas Foster, in which butter and ice cream are replaced by reduced-fat margarine and fat-free, sugar-free rum ice cream, for a total fat content of just three grams. The butter used to create a traditional roux for gumbo gets replaced by canola oil and okra, and smoked turkey takes the place of bacon in collard greens. Though these approximations won't necessarily satiate those with a taste for rich foods, the retention of all the traditional soul food spices certainly helps: Tramaine's Oven Fried Chicken benefits from a flavorful coating of garlic and onion powder. Other recipes avoid the fat trap entirely; Orange Sweet Potatoes-hollowed-out orange peels filled with a brandy-infused mashed sweet potato mixture-prove inventive and addictive. Nutritional information is included for each dish; those on a restricted diet are bound to find some good ideas, though traditionalists may not be convinced.

Soul food cooking doesn’t have to be bad to taste good
Fabiola Demps Gaines and Roniece Weaver’s New Soul Food Cookbook for People with Diabetes, the first diabetes cookbook for and by African Americans, was a blockbuster with more than 75,000 copies in print. With this new Small Steps Press edition of their book, Gaines and Weaver take those same principles of healthier soul food cooking to you. Healthy Soul Food Cooking shows you how to cut the fat, cholesterol, and salt in your favorite soul food recipes while still keeping the flavor you deserve. All the Cajun, creole, and down-home favorites are here--and now in healthier versions than ever before.
Showdown At The Food Pyramid
There's trouble afoot at the Food Pyramid: Strange new junk food like "candy bar" and "hot dog" are kicking off all the healthy food to have their own party. Even poor Granny Smith apple gets the boot! As the fruits and vegetables try to regroup, the junk keeps the party going. But no pyramid can support all that junk for long-when it comes time to rebuild, will the healthy foods be able to find the right balance?
With different diets receiving so much attention in recent years, nutrition can be a confusing topic for young readers, so Rex Barron uses a simple story and animated edibles to present an easy introduction to the basic concepts of healthy eating as recommended by the United States Department of Agriculture.
PreSchool-Grade 2–In this dynamic picture book, personified foods fight a battle over good nutrition. Following the wisdom of the Great Food Guide tacked on the wall, the various edibles that form the pyramid have always tried to remain in balance. Then, dangerous interlopers overrun them and take over the top level ("They had strange names like Hot Dog, Candy Bar and Donut, and they liked to cause trouble"). The healthy foods almost give up trying to make things right again, but the problem is resolved when the pyramid is destroyed by its own excess; with all of that fattening stuff on top, it collapses "under its own weight." The foods then rebuild the structure, a process shown in a literal and amusing way, with sturdy starches supporting bright fruits and vegetables, and finally, way up on top, a few sweets and fats, which are allowed to return. The message is up front, but the humorous tone keeps the story from becoming overwhelmingly didactic. The pictures are great, with vivid colors and lots of drama and personality. Barron's light touch and child-friendly approach make this offering more enjoyable than most of the books available on nutrition.–Lauralyn Persson, Wilmette Public Library, IL

Happy Feet, Healthy Food: Your Child's First Journal of Exercise and Healthy Eating
"When I was younger, I thought Albert Einstein was the world's only real genius and his famous equation, E=MC2, was the proof of his genius. Now I am older and wiser, and I realize genius takes many forms.
"The book in your hands is a work of genius, for example.
"I say this with certainty because this is the first book to recognize that we must begin to teach our kids about good health and nutrition at a very early age. When we wait longer, as we have for too long, we end up raising kids who are overweight and out-of-shape, as the daily newspapers now tell us almost every morning. Others will soon wake up and produce more books and videos to encourage kids' fitness, but this will always be the first, and I dare say it will be difficult for anyone else to improve upon it.
"This book couldn't have come into existence without the genius of Carol Goodrow. I have known Carol for a half-dozen years, and I have been continually amazed at her energy, intelligence, and, most important of all, her good heart. She has astounded me with the boundless enthusiasm she has poured into her Web site, (...). It is a fun and info-packed place for youngsters to learn about running and good health.
"This book is all that, and more. Part of Carol's genius is the way she integrates fitness with the traditional school subjects. When your kids use this book, often with you at their side, they won't just get healthier. They'll also practice basic counting skills, and write short stories about food, exercise, and the outside environment.
"A number of research studies have shown that aerobic exercise floods the brain with oxygen, unlocking its creativity. Carol uses this simple, scientific fact to help you raise a healthier and faster-learning child. You could hardly ask for more.
"I hope you'll open this book often with your child. You'll both be glad you did. And you'll continue to see the benefits for many years to come-perhaps even a lifetime."

Healthiest Meals on Earth: The Surprising, Unbiased Truth About What Meals to Eat and Why
Healthiest Meals on Earth: The Surprising, Unbiased Truth About What Meals to Eat and Why
Jonny Bowden's The Healthiest Meals on Earth contains recipes for more than sixty dishes and drinks that use nutritious and healthy cooking methods. Forty of these dishes will combine to create ten different "poly-meals", specially crafted meals that contain key nutrients found to promote long-term health. They include Sweet and Thai Spicy Shrimp and Fruits, Persian Chicken with Autumnal Accompaniments, and the "iron booster" of Tender Calf's Liver and Sweet Beets. A "Healthiest Holiday Meal" features Citrus Stuffed Turkey, Zippy Fruit Salsa, and Sweet Potato Pie. The poly-meals are designed to be eaten three-to-five times a week.
Another ten recipes are not part of the poly-meal structure; instead they are one-pot meals that include Slow-Cooker Chicken Curry, Miso Bean Soup, and Venison Stew. A chapter on drinks will include nutritious smoothies, so-called "green drinks", and others. Jonny will provide healthy cooking tips throughout the book, as well as an analysis of the foods in each recipe.
Side dishes, such as Cold Strawberry Soup and Veggie Slaw with Flax Oil, and desserts, such as Raw Chocolate Fondue, are also featured.

Cooking For Weight Loss Surgery Patients
"These recipes have been tried and tested, savored & enjoyed by weight loss surgery patients and supporters alike. Post-op dietary guidelines vary and we encourage weight-loss surgery patients to learn the basic principles of nutrition and make wise choices on what they eat. One of the key features of Dick Stucki's book is the nutritional analysis included with each recipe. You'll find the recipes high in protein, low in carbohydrates and in compliance with the needs & restrictions of most bariatric guidelines. Cooking for WLS Patients also features shopping ideas, and cooking tips, as well as serving and storing suggestions. This is a wonderful resource to weight-loss surgery patients throughout the world." --Colleen M. Cook, Bariatric Suupport Centers International
"This cookbook is not just a bunch of recipes. On every page, there are special notes from the chef's notebook, kitchen tips, cheese helps, kitchen tips and other ideas for the using the recipes. I find this to be an incredibly positive approach to share with the many weight loss surgery patients who have had the surgery in years past and others who will have weight loss surgery in the future. This book serves patients extremely well. This book serves many functions, and I urge patients and supporters alike to read this book carefully and put into use throughout your life the principles taught by this author and chef." --Dr. R. Chad Halversen M.D.
